Here is the full recipe for the bluefin tuna with JC's cream sauce and a side of fresh green beans!

Ingredients
Bluefin Tuna:
- 5-6 fresh bluefin tuna steaks
- olive oil
- slap-ya-mama (or any cajun seasoning)
- garlic salt
JC's Cream Sauce:
- crema - substitute: heavy whipping cream
- 1 yellow onion
- 1 jalepeño
- cilantro
- italian seasoning
- slap-ya-mama
Green Beans:
- couple handfuls of fresh green beans
- 1 onion sliced in strings
- 1/2 lb of bacon
- sliced almonds
- bone collector mac daddy seasoning
Steps
- Lay out your Bluefin Tuna steaks on a aluminum-sheet-covered pan and cover in olive oil, add slap ya mama and garlic salt to cover each steak. flip and repeat.
- prepare your vegetables for the cream sauce. dice your onions and jalepeño and chop up your cilantro. after everything is chopped, add your onions in a saucepan and cook on the stove until translucent.
- slice onion into strips along with small 1/2" strips of the bacon. add to your wok and place on high heat.
- Add about a cup to 2 cups of Crema or heavy whipping cream to the saucepan with translucent onions and stir and add in your cilantro and jalepeño dices into the crema. stir occasionally until thickened up.
- after the bacon fries and onions cook down in your wok add a little pour of sliced almonds to the mixture. Once those cook for a couple of minutes, add your fresh green beans and mix together. stir around and add your mac daddy seasoning and cook until the green beans are charred and still crunchy on the inside.
- after the cream sauce thickens up add slap ya mama and a couple sprinkles of italian seasoning. let cook for a few more minutes or until thickened
- Add your tuna to a grill heated to ~700° F and cook until steaks are to your liking.
- drizzle cream sauce on top of tuna steak and enjoy!
