From Boat to Frying Pan: Cooking Fresh Hackberry Trout

There’s nothing quite like the taste of a fish you caught yourself—especially when it comes from the bountiful waters of Hackberry, Louisiana. We recently took a trip out with Let’s Geaux Charters, and man, did they put us on the fish. The speckled trout were biting, the weather was perfect, and we came back to the dock with an ice chest full of fresh catch and memories.

After a successful day on the water, there’s only one thing left to do: fire up the fryer.

Whether you’re a seasoned angler or just love good Southern cooking, this fried trout recipe is simple, delicious, and packed with that fresh-from-the-Gulf flavor. We like to keep it classic—crispy on the outside, flaky on the inside, and seasoned just right.

INGREDIENTS: 

STEPS:

  1. Check your fish filets for bones and remove any blood lines. Slice as thin as possible
  2. In a bowl, combine eggs, mustard, italian dressing (measure with your heart ;)). With a fork whip ingredients together
  3. Pour mixture on top of fish and shake thoroughly so each filet is coated well
  4. Pour oil in you pot and let warm up. Looking for 325-350°F.
  5. As the oil is heating, slice your fries with a French Fry Cutter and soak fries in ice water for at least 30 minutes to remove excess starch to maintain crispiness .
  6. As your oil is reaching 350°F take the fish from the egg mixture and put it in a Batter Bowl with your Southern Crispy Fish Fry. add the grate back on top and shake well to coat the fish filets. Once coated flip the batter bowl to allow the batter to go through bottom and remove filets from the bowl. Be sure to place fish on the fish fry and not the grate divider as it will cause fish fry to stick to grate. 
  7. Place the fish filets in the peanut oil once it reaches the correct temp. Use caution and place the fish with your hand going away from you to avoid burning 
  8. It takes roughly 4 minutes at 350 degrees, or you can use the cajun method: when the fish starts to float and it turns the golden brown color you like
  9. Once your fish is fried, pat dry your fries before placing in oil in small amounts making sure not to overcrowd the pot.
  10. Fry for 5-10 minutes depending on desired crispiness 
  11. when removing fries from grease, place on a pan with paper towel to absorb excess oil and salt and pepper to taste before cooling.
  12. Serve and Enjoy!
